Buy any time and install before you fly, while you are on Wi-Fi. Installing early does not use up days on most plans.

Plan days start when you land
Most plans start counting when your phone first connects to a network in your destination.

A few start at install
A few plans, like some 100 MB starters, start the day you install them. The plan says “Days start when you install” if so. Install those on arrival.
Install at home on Wi-Fi, then switch the eSIM on when the plane lands.
